Asian
Spring and Summer Rolls
Everyone loves crispy Chinese Spring Rolls and they are easy to
make, using store bought wrappers! We'll also make Vietnamese Summer
Rolls which are entirely fat free, cool and refreshing to eat, with
almost NO cooking involved!
Chinese
Vegetarian Cooking
Chinese cuisine is wonderful for vegetarian cooking with its flavorful
combinations and creative use of ingredients. We'll learn all about
how to use several types of tofu and cook two delicious Chinese
vegetarian dishes using no meat, fish, dairy or eggs.
Quick and Easy Thai
Enjoy Thai restaurants? If you like Thai flavors and want to give
a Thai twist to some familiar American favorites this one is for
you. We will learn simple, Thai-taste dishes with a short prep time
including Thai salmon cakes, Cilantro garlic grilled chicken, and
a quick light Thai cole slaw.
Two Jewish Holiday Dishes With Potatoes
Every culture has its own special holiday foods. Potato latkes -
potato pancakes - are a hot, crisp, fabulous treat usually served
at Chanukah, a Jewish winter festival. Potato kugel, a substantial
dish baked in a lasagna pan is also a traditional favorite. It's
great for crowds or potlucks. Come learn how to make them your family's
favorite too!
Working
With Phyllo
Phyllo is paper-thin dough popular in many Middle Eastern treats
and useful for all kinds of delicious, light, crunchy dishes. It's
found most local groceries and easy to work with - once you know
the tricks. We'll make the famous dessert baklava (sweet but not
too sweet), and a traditional appetizer, spinach triangles, great
for parties or snacks. Overcome your Fear of Phyllo!
Sushi Making
Workshop for Couples
Who knew sushi making could be Romantic! In this special Couples
Only sushi-making workshop on Valentine's Day we'll learn how to
make delicious, healthy sushi and eat plenty too! You'll learn how
to prepare and cook sushi rice, create fillings, and make great
sushi rolls. You are welcome to bring a romantic dessert to share
to class if you wish. So bring your sweetie and learn to make sushi
together!
East-West
Fusion Cooking
Fusion cooking uses cooking styles and ingredients from different
parts of the world to create interesting new tastes. In East -West
Fusion Cooking we'll put together Asian and Western ingredients
and techniques to make some casual, easy, innovative dishes. Dishes
include: Chicken noodle salad with Asian peanut dressing, and soy
glazed salmon burgers with ginger lime aioli (mayonnaise).
Introduction
to Stir-Frying
Do your stir-fry dishes turn out soggy? Sloppy? Learn basic stir-fry
technique to make quick-on-the-table meals. We'll create two Chinese
stir-fried dishes and understand how to adapt stir-frying to any
cuisine.

Spring Rolls and Lettuce Wraps
Inexpensive, and easily available in Roanoke, Chinese spring rolls
wrappers are wonderfully easy to use. We'll use them to make two
dishes: authentic Chinese spring rolls, and a surprising Asian dessert.
And as an added bonus, we make ultra-easy, delicious, Chinese lettuce
wraps.
Introduction
to Chinese Cooking - Soups and Stews
Learn a basic Chinese technique for stewing in soy sauce (it's called
red cooking - and it's delicious!) and everyone's favorite Chinese
soup, hot and sour soup. We'll talk about using authentic Chinese
ingredients easily available in Roanoke to create authentic delicious
dishes your family will love.
Introduction
to Chinese Cooking - Steaming, and Tea Smoking
In traditional Chinese cooking, steaming over water often takes
the place of oven baking. Smoking over tea leaves produces an exquisitely
delicate smoky flavor not found in western BBQ-type smoking - yet
so easy you can do it over a stovetop at home for dinner - no special
equipment required! In this class well make delicious steamed and
tea smoked fish and chicken dishes
Thai Workshop
This workshop will focus on two traditional and popular Thai dishes
and gives a good in-depth understanding of Thai ingredients and
seasonings. You will make authentic pad Thai, a very popular noodle
dish, and Thai satay (spiced meat on a stick) with a lovely coconut
cream-based peanut dipping sauce.
Sushi Workshop
Our most requested cooking class! Love sushi? It's a lot easier
to make than you think. This very popular hands-on workshop is designed
to teach you everything you need to know to make delicious, healthy
sushi at home. You'll learn how to prepare and cook sushi rice,
create fillings, and make great sushi rolls.
Let's Visit
an Asian Grocery Store
If you love to cook and eat Asian food, you need to feel comfortable
shopping in an Asian grocery. But it can be confusing, with hard
to understand labels and unfamiliar produce. We will tour a nearby
Asian grocery, shop and return to the Brambleton Center to prepare
some fast snacks as an added bonus! We will meet outside J &
L Oriental Food Mart, 3901 Brambleton Ave, next to Papa Johns about
a mile from the Center going towards the city. Please Be Prompt!
Asian Appetizers
Calling all adventurous cooks eager to learn incredible Asian appetizers,
party hors d'ouvres, and finger foods from Southeast Asia, China
and India. Give your friends and family something new to nibble
all with ingredients easily available right here in Roanoke.
Creative
Asian Cooking with Chinese Spring Roll Wrappers
Inexpensive, amazingly versatile, and easily available in Roanoke,
Chinese spring rolls wrappers can be used to make many authentic
wonderful small dishes. Once you master the technique you can make
many appetizers, lunches or even sweet snacks! We'll make three
Asian accented dishes using spring roll wrappers: Chinese spring
rolls, Indian samosas, and a surprising modern Asian-taste dessert
with fruit.
More Asian
Wraps
Many cultures love wrapped-up foods - from tortillas to sandwiches.
Traditional Asian wraps are different, fun to learn and totally
delicious. In this class we will learn Vietnamese summer rolls using
rice paper wrappers, Chinese shu mai, an open-faced dumpling, and
potstickers, a type of pan-fried Chinese ravioli with a sweet-spicy
dipping sauce.
Asian Summer Cooking
Let's keep it cool for summer with Vietnamese summer rolls and refreshing
Asian salads. All these recipes require minimal cooking and simple,
fresh ingredients - perfect to use up the garden's bounty. This
one is for those of you who asked for a class with something Vietnamese.
Two Favorite
Asian Soups: Chinese Hot and Sour Soup and Japanese Miso Soup
Learn how to make two wonderful warming Asian soups: Hot and Sour
Soup, a great favorite at Chinese restaurants, and Japanese Miso
soup - a Japanese tradition. We'll also learn about the different
kinds of miso and how to use them.
