The founder of the Roanoke International Cooking Experience is Maxine Fraade.

I originally began learning about international cuisine when living in Geneva, Switzerland as a newlywed. I took my first Asian cooking lesson there while living there and missing my favorite cuisine from home - Chinese!

I have since studied Chinese and other Asian cuisine's including Japanese, Vietnamese and Thai, taking classes in New York City at various schools including the famed Institute for Culinary Education. I have studied with Eileen Fei-Lo, Hiriko Shimbo, and Erica Wides, among other well-known teachers. I continue to make regular trips to New York and other locations to advance my studies.
